Tonight was a tuna steak marinated in a tablespoon of olive oil, the juice of half a lemon, old bay, parsley, black pepper. Pan seared and sliced on a bias. served on a spinach salad that was 1/2 a medium sweet onion (rough dice) baby bella mushrooms about 3/4 cup, snow peas, one slice of bacon cooked and drained of fat and finely diced, sauteed together for about 7-9 minutes, added spinach to the top ( to wilt), served with large croutons, slivered almonds, peeled carrot for garnish, 1/2 ounce grated aged Gouded, and Blackberries. (the other half of the lemon I juiced over the finished dish)
In total (with the marinade for the Tuna) I used about 2-3 Tablespoons of Olive Oil and about 1/2 teaspoon of salt.
I had a light dinner too, but a little simpler. I had grilled chicken breast with lemon and oregano, a dash of pepper. I had spinach sauteed with garlic on the side and a little fresh mozzarella with olive oil, basil and roasted red pepper. Skipped dessert because the jeans are a little snug these days.
I have no idea why women care about their weight... Kathy is on a diet, so i have tried to help by cooking healthier stuff for her, but I can honestly say, she looks fine the way she is. But if it makes her feel better about herself to lose weight, I am not going to be argue.
Tomorrow I get to make some beautiful NY Strip steaks, she won't let me make her a sea scallop bisque ( I may make it for myself anyway). The goal for the steaks is a good medium rare (just me it would be black and blue), portabellos and carmelized onions.
Your dinner sounded great, simpler is sometimes better.

On the women/weight thing...everyone tells me the same, but the bottom line is that we are highly critical of ourselves, so we diet now and again. In this case for me, it is quite simple...I ate like a pig all through the holidays!! Now I have to be good!
